Separate leaves from stems. Cut thick stems in half vertically so they&#8217;re no wider than 0.8cm \/ 0.3&#8243; thick.<\/li>\n\n\n\n<li><strong>Noodles \u2013&nbsp;<\/strong>Prepare according to packet directions and drain.&nbsp;<em>Time it so they\u2019re cooked just before using \u2013 do not leave cooked rice noodles&nbsp;lying around, they break in the wok.<\/em><\/li>\n\n\n\n<li><strong>Sauce<\/strong>&nbsp;\u2013 Mix ingredients until sugar dissolves.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">COOKING:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Heat oil:&nbsp;<\/strong>Heat 1 tbsp oil in a very large heavy based skillet or wok over high heat.<\/li>\n\n\n\n<li><strong>Cook garlic and chicken:&nbsp;<\/strong>Add garlic, cook 15 seconds. Add chicken, cook until it mostly changes from pink to white.<\/li>\n\n\n\n<li><strong>Chinese broccoli STEMS:&nbsp;<\/strong>Add Chinese broccoli stems, cook until chicken is almost cooked through.<\/li>\n\n\n\n<li><strong>Chinese broccoli LEAVES:&nbsp;<\/strong>Add Chinese broccoli leaves, cook until just wilted.<\/li>\n\n\n\n<li><strong>Scramble egg:&nbsp;<\/strong>Push everything to one side, crack egg in and scramble.<\/li>\n\n\n\n<li><strong>REMOVE chicken from wok:&nbsp;<\/strong>Remove everything in the wok onto a plate (scrape wok clean).<\/li>\n\n\n\n<li><strong>Caramelise noodles:&nbsp;<\/strong>Return wok to stove, heat 2 tbsp oil over high heat until it starts smoking (HOT is key!).&nbsp;Add noodles and Sauce. Toss as few times as possible to disperse Sauce and make edges of noodles caramelise \u2013 about 1 to 1 1\/2 minutes.<\/li>\n\n\n\n<li><strong>Add chicken back in:&nbsp;<\/strong>Quickly add chicken and veg back in, and toss to disperse.
