{"id":4641,"date":"2023-09-24T14:51:32","date_gmt":"2023-09-24T14:51:32","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=4641"},"modified":"2023-09-24T14:51:33","modified_gmt":"2023-09-24T14:51:33","slug":"drunken-noodles","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/24\/drunken-noodles\/14\/51\/4641\/32\/appdev2098\/thai-food-recipes-2\/noodles\/","title":{"rendered":"DRUNKEN NOODLES"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">FOR THE CHICKEN &amp; MARINADE:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2\u00a0tablespoons\u00a0water<\/li>\n\n\n\n<li>12\u00a0ounces\u00a0sliced chicken thighs or chicken breast\u00a0(340g)<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0soy sauce<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0oil<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0cornstarch<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">FOR THE REST OF THE DISH:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>8\u00a0ounces\u00a0wide dried rice noodles(225g)<\/li>\n\n\n\n<li>1 1\/2\u00a0teaspoons\u00a0brown sugar\u00a0(dissolved in 1 tablespoon hot water)<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0soy sauce\u00a0(Thai soy sauce preferred)<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0dark soy sauce<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0fish sauce<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0oyster sauce<\/li>\n\n\n\n<li>pinch\u00a0ground white pepper<\/li>\n\n\n\n<li>3\u00a0tablespoons\u00a0vegetable or canola oil\u00a0(divided)<\/li>\n\n\n\n<li>3\u00a0cloves\u00a0garlic\u00a0(sliced)<\/li>\n\n\n\n<li>\u00bc\u00a0teaspoon\u00a0fresh grated ginger<\/li>\n\n\n\n<li>2\u00a0shallots\u00a0(sliced, about 1\/3 cups)<\/li>\n\n\n\n<li>1\u00a0scallion\u00a0(julienned into 3-inch pieces)<\/li>\n\n\n\n<li>4\u00a0Thai red chili peppers\u00a0(deseeded and julienned)<\/li>\n\n\n\n<li>1\u00a0cup\u00a0holy basil or Thai basil\u00a0(loosely packed)<\/li>\n\n\n\n<li>5 to 6\u00a0pieces\u00a0baby corn\u00a0(split in half, optional)<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0Shaoxing wine<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Work the 2 tablespoons of water into the sliced chicken with your hands until the chicken absorbs the liquid. Add 1 teaspoon soy sauce, 1 teaspoon oil, and 2 teaspoons cornstarch, and mix until the chicken is evenly coated. Set aside for 20 minutes.<\/li>\n\n\n\n<li>Follow the directions on the rice noodle package to prepare your noodles. What we usually do is prepare a stainless steel bowl with hot tap water to soak the noodles for about 15 minutes. Then we just drain them and set aside for cooking.<\/li>\n\n\n\n<li>Stir together the dissolved brown sugar mixture, soy sauces, fish sauce, oyster sauce, and white pepper in a small bowl and set aside.<\/li>\n\n\n\n<li>Heat your wok until it\u2019s close to smoking, and spread 2 tablespoons of oil around the perimeter of the wok. Add the chicken and let it sear for 1 minute on each side until it\u2019s about 90% cooked. Remove from the wok and set aside. If the heat was high enough and you seared the meat correctly, your wok should be still clean with nothing sticking to it. If not, you can wash the wok to prevent the rice noodles from sticking.<\/li>\n\n\n\n<li>Continue with the wok on high heat and add 1 tablespoon of oil, along with the garlic and grated ginger.<\/li>\n\n\n\n<li>After a few seconds, add the shallots. Stir fry for 20 seconds and add the scallions, chili peppers, basil, baby corn and shaoxing wine. Stir-fry for another 20 seconds and add in the rice noodles. Use a scooping motion to mix everything for another minute until the noodles warm up.<\/li>\n\n\n\n<li>Next, add the prepared sauce mixture and stir-fry at the highest heat for about 1 minute until the noodles are uniform in color.
