{"id":4888,"date":"2023-10-03T12:29:19","date_gmt":"2023-10-03T12:29:19","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=4888"},"modified":"2023-10-03T12:29:21","modified_gmt":"2023-10-03T12:29:21","slug":"biang-biang-noodles","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/10\/03\/biang-biang-noodles\/12\/29\/4888\/19\/appdev2098\/chinese-food-three\/noodle\/","title":{"rendered":"Biang Biang Noodles"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>375g\/13ozs. all purpose flour<\/li>\n\n\n\n<li>200ml\/7flozs. water<\/li>\n\n\n\n<li>1\/2 teaspoon salt<\/li>\n\n\n\n<li>Oil for greasing<\/li>\n<\/ul>\n\n\n\n<p><strong>Chilli oil<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>200ml\/7flozs. peanut oil<\/li>\n\n\n\n<li>4 tablespoons soy sauce<\/li>\n\n\n\n<li>3 tablespoons chilli flakes<\/li>\n\n\n\n<li>1.5 tablespoon vinegar<\/li>\n\n\n\n<li>3 cloves garlic, peeled and finely diced<\/li>\n\n\n\n<li>3 sticks green shallots, finely chopped<\/li>\n\n\n\n<li>1\/2 teaspoon cumin<\/li>\n\n\n\n<li>3 teaspoons toasted sesame seeds<\/li>\n\n\n\n<li>100g\/3.5ozs. pork mince (optional)<\/li>\n\n\n\n<li>1\/2 cup noodle cooking water<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Directions<\/h3>\n\n\n\n<p><strong>Step 1 &#8211;<\/strong>&nbsp;Mix the flour, water and salt together until shaggy in texture. Knead until smooth and elastic (5 minutes in a mixer with a dough hook). Shape into a round and cut into 8 even pieces. Shape them into a small cucumber shape and coat in oil. Cover and rest at room temperature for 3 hours (to allow the dough to relax).<\/p>\n\n\n\n<p><strong>Step 2 &#8211;<\/strong>&nbsp;Put on a large pot of water on to boil.<\/p>\n\n\n\n<p><strong>Step 3 &#8211;<\/strong>&nbsp;Make the sauce-just add all ingredients in a small saucepan and heat for through until pork is cooked. If you&#8217;re not using pork just heat for a minute. If you are using pork cook it until the pork is cooked through. Keep the lid on to keep it warm.<\/p>\n\n\n\n<p>Pressing the rolling pin against the rolled out dough<\/p>\n\n\n\n<p><strong>Step 4 &#8211;<\/strong>\u00a0Roll out all the pieces of dough on a lightly greased surface using a small greased rolling pin. You want each piece to be around 2.5-3 inches wide and a bit longer than the rolling pin. Firmly press the rolling pin against the center vertically leaving a depression (see above).<\/p>\n\n\n\n<p><strong>Step 5 &#8211;<\/strong>&nbsp;Oil your hands lightly and then gently pull it apart using the depression as a opening. It will stretch open with little prompting. Stretch it out so that it is thin, like a ribbon and a very, very long belt. Place directly into the water and cook for 1 minute or until it rises to the surface.
