{"id":5187,"date":"2023-10-05T06:41:12","date_gmt":"2023-10-05T06:41:12","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=5187"},"modified":"2023-10-05T06:41:13","modified_gmt":"2023-10-05T06:41:13","slug":"cantonese-spring-rolls","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/10\/05\/cantonese-spring-rolls\/06\/41\/5187\/12\/appdev2098\/chinese-food-four\/appetizers-chinese-food-four\/","title":{"rendered":"Cantonese Spring Rolls"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3 dried Chinese or shiitake mushrooms<\/li>\n\n\n\n<li>2 oz pork (brown first)<\/li>\n\n\n\n<li>6 small cooked shrimp (prawns), shells and tails removed<\/li>\n\n\n\n<li>\u00bd Tbsp soy sauce<\/li>\n\n\n\n<li>\u00bc tsp sesame oil<\/li>\n\n\n\n<li>\u00bd Tbsp sake, rice wine, or dry sherry<\/li>\n\n\n\n<li>\u00bd Tbsp vegetable oil<\/li>\n\n\n\n<li>1 tsp cornstarch (cornflour)<\/li>\n\n\n\n<li>\u00bd tsp minced garlic<\/li>\n\n\n\n<li>\u00bd tsp minced ginger<\/li>\n\n\n\n<li>\u00bd carrot, shredded<\/li>\n\n\n\n<li>\u00bc bell pepper, finely chopped<\/li>\n\n\n\n<li>\u00bc cup shredded Chinese\/napa cabbage<\/li>\n\n\n\n<li>2 green (spring) onions, finely chopped<\/li>\n\n\n\n<li>\u00bc cup chopped bean sprouts<\/li>\n\n\n\n<li>12 spring roll wrappers<\/li>\n\n\n\n<li>\u00bd tablespoon cornstarch (cornflour), mixed with \u00bc cup water<\/li>\n\n\n\n<li>Vegetable oil for deep-frying<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Soak the dried mushrooms in water for 30 minutes. Remove and squeeze out excess water. Remove stems and finely chop. Set aside.<\/li>\n\n\n\n<li>Brown the pork in a skillet. Set aside. When cool enough, chop into finer pieces.<\/li>\n\n\n\n<li>Chop shrimp finely.<\/li>\n\n\n\n<li>Combine the soy sauce, sesame oil, sake, and 1 teaspoon cornstarch in a bowl. Add the pork and shrimp. Let marinate for 15 or so minutes, while you prepare the remaining ingredients.<\/li>\n\n\n\n<li>Heat a wok over medium heat and add \u00bd tablespoon vegetable oil. Stir-fry the mushrooms for 1 minute.<\/li>\n\n\n\n<li>Then add the garlic, ginger, carrots, cabbage, and pepper and stir-fry for 1 minute.<\/li>\n\n\n\n<li>Finally, add the green onions and beansprouts and stir-fry for 1 minute.<\/li>\n\n\n\n<li>Remove vegetables from wok and transfer to the bowl with the meat and shrimp.<\/li>\n\n\n\n<li>To assemble each spring roll, lay the wrapper in front of you at an angle to form a diamond.<\/li>\n\n\n\n<li>Spoon 2 tablespoons of the mixture near the bottom of the wrapper.<\/li>\n\n\n\n<li>Dip your finger into the cornstarch and water mixture and run it along all the edges of the wrapper.<\/li>\n\n\n\n<li>Fold the bottom up partway. Fold the sides in and roll up until closed.<\/li>\n\n\n\n<li>Dip your finger in the cornstarch and water mixture again and use your finger to seal the roll.<\/li>\n\n\n\n<li>Preheat vegetable oil in deep-fryer or large saucepan* to 180C\/350F.<\/li>\n\n\n\n<li>Gently place the spring rolls into the hot oil. Cook in batches so that they rolls do not overlap.<\/li>\n\n\n\n<li>Fry for about 3-5 minutes or until crispy and golden.
