{"id":5602,"date":"2023-10-12T15:46:04","date_gmt":"2023-10-12T15:46:04","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=5602"},"modified":"2023-10-12T15:46:06","modified_gmt":"2023-10-12T15:46:06","slug":"home-made-shio-ramen","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/10\/12\/home-made-shio-ramen\/15\/46\/5602\/04\/appdev2098\/japanese-food-recipes-4\/ramen\/","title":{"rendered":"HOME-MADE SHIO RAMEN"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>80-100g\/2.8-3.5oz&nbsp;fresh egg noodles&nbsp;(note 1)<\/li>\n\n\n\n<li>400ml\/13.5oz\u00a0Home-made Ramen Broth\u00a0(boiling hot, note 2)<\/li>\n\n\n\n<li>2&nbsp;tbsp&nbsp;Salt Flavouring Base<\/li>\n<\/ul>\n\n\n\n<p>Salt Flavouring Base (makes about 120ml\/4.1oz)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250ml\/8.5oz&nbsp;water<\/li>\n\n\n\n<li>5g\/0.2oz\u00a0konbu\u00a0(dried kelp)<\/li>\n\n\n\n<li>10g\/0.35oz&nbsp;dried scallops&nbsp;(note 3)<\/li>\n\n\n\n<li>5g\/0.2oz\u00a0bonito flakes<\/li>\n\n\n\n<li>20g\/0.7oz&nbsp;salt<\/li>\n\n\n\n<li>50ml\/1.7oz&nbsp;sake<\/li>\n\n\n\n<li>25ml\/0.8oz\u00a0mirin<\/li>\n\n\n\n<li>5ml\/0.2oz&nbsp;light soy sauce&nbsp;(note 4)<\/li>\n<\/ul>\n\n\n\n<p>Shio Ramen Topping<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2\u00a0\u00a0slices\u00a0\u00a0Yakibuta (Braised Pork)<\/li>\n\n\n\n<li>1&nbsp;boiled egg cut in half<\/li>\n\n\n\n<li>A&nbsp;handful of&nbsp;beansprouts&nbsp;, blanched<\/li>\n\n\n\n<li>3&nbsp;tbsp&nbsp;sweet corn kernels&nbsp;(fresh corn &#8211; boiled, canned or frozen &#8211; defrosted)<\/li>\n\n\n\n<li>2&nbsp;&nbsp;tbsp&nbsp;&nbsp;finely chopped shallots\/scallions<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<p>Salt Flavouring Base (makes about 120ml\/4.1)<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Soak konbu and scallops in 250ml\/8.5oz water overnight.<\/li>\n\n\n\n<li>Transfer the water with konbu and scallops to a saucepan. Heat over medium heat and bring it to a boil.<\/li>\n\n\n\n<li>Remove the konbu, reduce heat to low to gently simmer and cook the scallops until the water reduces to half.<\/li>\n\n\n\n<li>Add bonito flakes and simmer for 2 minutes.<\/li>\n\n\n\n<li>Turn the heat off and strain through a sieve. Transfer the liquid to a saucepan.<\/li>\n\n\n\n<li>Add the remaining ingredients of Salt Flavouring Base to the pan and cook over low heat.<\/li>\n\n\n\n<li>Once the salt is diluted, turn the heat off.<\/li>\n<\/ol>\n\n\n\n<p>Shio Ramen<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Place Salt Flavouring Base in a serving bowl.<\/li>\n\n\n\n<li>Boil water in a saucepan and cook noodles as per the instructions (note 1) and drain well.<\/li>\n\n\n\n<li>Add Ramen Broth keeping about 50ml\/1.7oz aside, and taste test. Adjust the saltiness with remaining Ramen Broth.<\/li>\n\n\n\n<li>Add the noodles.
