{"id":5692,"date":"2023-10-13T04:15:07","date_gmt":"2023-10-13T04:15:07","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=5692"},"modified":"2023-10-22T05:22:04","modified_gmt":"2023-10-22T05:22:04","slug":"sakura-ice-cream-with-monaka","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/10\/13\/sakura-ice-cream-with-monaka\/04\/15\/5692\/07\/appdev2098\/japanese-recipes-3\/3-desserts-recipes\/","title":{"rendered":"Sakura ice cream with monaka"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">SAKURA SYRUP<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>18 salted cherry blossom, also known as sakura shiozuke, briefly rinsed to remove some of the salt<\/li>\n\n\n\n<li>240g of water<\/li>\n\n\n\n<li>230g of sugar<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">SAKURA ICE CREAM<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>600g of double cream<\/li>\n\n\n\n<li>5\u00a0egg yolks<\/li>\n\n\n\n<li>1 vanilla pod, split and seeds scraped<\/li>\n\n\n\n<li>100g of sugar<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">ANKO<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>200g of\u00a0red adzuki beans, washed<\/li>\n\n\n\n<li>180g of caster sugar<\/li>\n\n\n\n<li>1\/2 tsp\u00a0salt<\/li>\n\n\n\n<li>6\u20138 monaka wafer shells<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Equipment<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Ice cream maker<\/li>\n\n\n\n<li>Thermometer<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Method<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>To make the ice cream, begin by making a cherry blossom syrup. Place the sugar, water and briefly rinsed cherry blossom in a pan and bring to a simmer. Stir to dissolve the sugar then take off the heat and leave to steep for 15 minute<\/li>\n\n\n\n<li>When it has finished steeping, add the double cream to the mixture and slowly bring it to a boil<\/li>\n\n\n\n<li>Meanwhile, in a separate bowl, whisk together the egg yolks, vanilla seeds and sugar until thick and pal<\/li>\n\n\n\n<li>Once the liquid has boiled, slowly pour it over the egg mixture whilst constantly whisking. Return the mixture to the pan and cook to 81\u00baC whilst continuously stirring. Once it reaches the correct temperature, immediately take it off the heat and cool over an ice bath. Once completely cooled, churn in an ice cream machine according to the manufacturer&#8217;s instructions, then reserve in the freezer until needed<\/li>\n\n\n\n<li>To make the anko, place the adzuki beans in a pan, cover with water and bring to the boil. Drain, recover with fresh water and bring to a boil again. Once the water is boiling, turn down to a simmer and cook for around 45 minutes<\/li>\n\n\n\n<li>Test if they are done by squashing a bean between your fingers \u2013 it should give with little resistance. If the beans are still too firm then continue to simmer (older beans can take up to 1.5\u20132 hours to cook). Once they&#8217;re ready, drain and add back to the pan without water. Place the pan over a medium-low heat, add half the sugar and stir until you can&#8217;t see the individual grains anymore, then add the rest of the sugar and continue to stir until the beans break down into a paste<\/li>\n\n\n\n<li>Add the salt and cook the paste a little more until it thickens.
