Add the salt, bay leaf, peppercorns and garlic.<\/p>\n\n\n\n<p>Bring the water to a gentle simmer over medium heat. Turn the heat down to low and cover the pan.<\/p>\n\n\n\n<p>Simmer for ten minutes.<\/p>\n\n\n\n<p>Check for doneness! You want an internal temp of 165\u00b0F. Once the chicken is done, take it off the heat.<\/p>\n\n\n\n<p>Let the chicken rest in its poaching liquid for a few minutes.
