{"id":6015,"date":"2023-11-09T03:19:25","date_gmt":"2023-11-09T03:19:25","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=6015"},"modified":"2023-11-09T03:19:26","modified_gmt":"2023-11-09T03:19:26","slug":"cheesy-chicken-mince-fritters-with-broccoli","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/11\/09\/cheesy-chicken-mince-fritters-with-broccoli\/03\/19\/6015\/25\/appdev2098\/chicken-recipes-one\/ground\/","title":{"rendered":"Cheesy Chicken Mince Fritters with Broccoli"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">FRITTERS:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500 g \/ 1 lb\u00a0chicken mince (ground chicken)\u00a0, or turkey or pork (Note 1)<\/li>\n\n\n\n<li>1\u00a0garlic clove,\u00a0minced<\/li>\n\n\n\n<li>1\u00a0egg<\/li>\n\n\n\n<li>\u00be\u00a0cup\u00a0panko breadcrumbs<\/li>\n\n\n\n<li>2\u00a0packed cups broccoli\u00a0, soft cooked &amp; finely chopped (1 head)(Note 2)<\/li>\n\n\n\n<li>\u00be\u00a0cup\u00a0finely chopped shallots<\/li>\n\n\n\n<li>1 1\/2 &#8211; 2\u00a0cups\u00a0shredded mozzarella\u00a0(or other cheese of choice)<\/li>\n\n\n\n<li>3\/4\u00a0tsp\u00a0salt\u00a0(reduce to 1\/2 tsp if using a flavored cheese)(Note 3)<\/li>\n\n\n\n<li>Black pepper<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">COOKING:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Oil spray<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">YOGHURT RANCH SAUCE (OPTIONAL):<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2\/3\u00a0cup\u00a0plain yoghurt<\/li>\n\n\n\n<li>1\/8\u00a0tsp\u00a0EACH dried dill, parsley and chives<\/li>\n\n\n\n<li>\u00bc\u00a0tsp\u00a0onion powder<\/li>\n\n\n\n<li>\u00bd\u00a0garlic clove, minced<\/li>\n\n\n\n<li>1 &#8211; 2\u00a0tsp\u00a0extra virgin olive oil<\/li>\n\n\n\n<li>Squeeze of lemon juice,\u00a0<em>optional<\/em><\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 200C\/390F. Line a baking tray with baking paper (or spray with oil).<\/li>\n\n\n\n<li>Place Fritter ingredients in a bowl, mix to combine.<\/li>\n\n\n\n<li>Measure out about \u00bc cup of mixture and pat into fritter shapes about 6 cm \/ 2.25&#8243; wide, 1cm \/ 2\/5&#8243; thick (they shrink a bit and become thicker).<\/li>\n\n\n\n<li>Place on tray. Spray the top (generously) with oil.<\/li>\n\n\n\n<li>Bake for 15 minutes, flip, spray with oil again then bake for a further 8 &#8211; 10 minutes until golden on top. Serve immediately with Sauce.<\/li>\n\n\n\n<li>Sauce: Mix ingredients together. Add salt and pepper to taste. Set aside for 20+ minutes.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\">Recipe Notes:<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>1. Chicken mince<\/strong>&nbsp;(ground chicken) sold at supermarkets can be very wet. Always look for packets&nbsp;that doesn&#8217;t have water in them (also indicates that it&#8217;s not very fresh).<\/li>\n\n\n\n<li><strong>2. Broccoli &#8211;<\/strong>&nbsp;You will need about 1 medium head of broccoli, florets only. Cook using your preferred method until soft &#8211; I boil or steam. Then chop finely &#8211; see recipe video. You can use the thick stem if you want &#8211; peel the outside before cooking, once cooked, chop it very finely.<\/li>\n\n\n\n<li><strong>3. Mozzarella cheese<\/strong>&nbsp;doesn&#8217;t have much salt in it. It stretches beautifully and that&#8217;s what I used in the photos and video. You can use any cheese you want. BUT if you use a flavoured cheese like cheddar, colby, tasty etc, reduce the salt slightly.<\/li>\n\n\n\n<li><strong>4.&nbsp;MORE VEGGIES:<\/strong>&nbsp;This recipe can take about 1.5 cups of extra veggies.
