{"id":6350,"date":"2023-11-09T10:23:38","date_gmt":"2023-11-09T10:23:38","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=6350"},"modified":"2023-11-09T10:23:39","modified_gmt":"2023-11-09T10:23:39","slug":"mexican-pulled-shredded-chicken","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/11\/09\/mexican-pulled-shredded-chicken\/10\/23\/6350\/38\/appdev2098\/chicken-recipes-three\/4-shredded-chicken\/","title":{"rendered":"Mexican Pulled (Shredded) Chicken"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1.5-2&nbsp;lb.&nbsp;boneless, skinless chicken thighs&nbsp;(see notes for breasts)<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0extra-virgin olive oil\u00a0plus more for skillet, if needed<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0smoked paprika<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0ground coriander<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0ground cumin<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0garlic powder<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0kosher salt<\/li>\n\n\n\n<li>1\/2\u00a0teaspoon\u00a0black pepper<\/li>\n\n\n\n<li>juice and zest of one lime<\/li>\n\n\n\n<li>lime wedges and fresh cilantro&nbsp;for serving, optional<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Mix the olive oil\u00a0(2 tablespoons), smoked paprika\u00a0(1 tablespoon), ground coriander\u00a0(1 teaspoon), ground cumin\u00a0(1 teaspoon), garlic powder\u00a0(1 teaspoon), kosher salt\u00a0(1 teaspoon), black pepper\u00a0(1\/2 teaspoon), and lime juice and zest\u00a0(from one lime)\u00a0in a small bowl or glass measuring cup.<\/li>\n\n\n\n<li>Place the chicken thighs in a container, bowl, or large plastic bag. Pour the marinade on top\u00a0(it will be thick)\u00a0and or stir to coat each piece of chicken evenly\u00a0(if in a bag, just smoosh it around until everything is evenly coated). Cover and refrigerate for at least 20 minutes, or as long as 24 hours.<\/li>\n\n\n\n<li>Heat a large\u00a0(12-inch)\u00a0non-stick skillet over medium high heat\u00a0(see notes for other skillets). Add marinated chicken; sear without moving on one side for 5-7 minutes\u00a0(check that it&#8217;s not burning after 2-3 minutes- you may want to turn the heat down to medium if you have very hot burners or flip it earlier if it&#8217;s cooking fast).<\/li>\n\n\n\n<li>Once the seared side is browned and looking crispy, flip to other side and sear, until chicken is cooked through to 165 degrees F or meat is no longer pink\u00a0(another 5-10 minutes, depending on thickness and size of chicken. Turn the heat down to medium or medium-low if both sides are seared but inside is not yet cooked the whole way). If you have a lid to your skillet, you can cover it to speed up the cooking time a bit.<\/li>\n\n\n\n<li>Remove chicken from skillet to a cutting board. Allow to rest for 5 minutes, then shred with two forks. Optional: for an extra punch of flavor, you can return the shredded chicken to the skillet to coat in the cooking juices.<\/li>\n\n\n\n<li>Serve with a squeeze of fresh lime juice garnished with fresh cilantro, if desired.
