{"id":7091,"date":"2023-11-13T06:02:58","date_gmt":"2023-11-13T06:02:58","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=7091"},"modified":"2023-11-13T06:20:16","modified_gmt":"2023-11-13T06:20:16","slug":"malabar-fish-biryani","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/11\/13\/malabar-fish-biryani\/06\/02\/7091\/58\/appdev2098\/rice-recipes-two\/biryani\/","title":{"rendered":"Malabar Fish Biryani"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 kg seer fish<\/li>\n\n\n\n<li>1 kg onions<\/li>\n\n\n\n<li>100 gm green chillies<\/li>\n\n\n\n<li>70 gm garlic<\/li>\n\n\n\n<li>70 gm ginger<\/li>\n\n\n\n<li>Juice of 2 lemons<\/li>\n\n\n\n<li>1 cup coriander leaves<\/li>\n\n\n\n<li>1 cup yoghurt<\/li>\n\n\n\n<li>Salt to taste<\/li>\n\n\n\n<li>1 kg rice (kaima rice is best)<\/li>\n\n\n\n<li>3 Tbsp ghee<\/li>\n\n\n\n<li>1 cup cooking oil<\/li>\n\n\n\n<li>\u00bd kg tomatoes<\/li>\n\n\n\n<li>1 tsp turmeric powder<\/li>\n\n\n\n<li>2 Tbsp cashew nuts broken<\/li>\n\n\n\n<li>2 Tbsp raisins<\/li>\n\n\n\n<li>4 glasses water (in proportion to the number of cups of rice)<\/li>\n\n\n\n<li>3 pods cardamom<\/li>\n\n\n\n<li>3 cinnamon sticks<\/li>\n\n\n\n<li>A pinch of garam masala<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Directions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Take 250 gm onions and cut them into thin slices. Heat oil and 1\/2 cup ghee in a pan, and fry the onion till golden brown. Fry cashew nuts and raisins and keep aside.<\/li>\n\n\n\n<li>Apply turmeric powder with enough salt and little water on the fish.<\/li>\n\n\n\n<li>Heat 2 tablespoons oil in a frying pan. Lightly fry the fish till half done and keep aside.<\/li>\n\n\n\n<li>In a heavy-bottomed vessel, heat 3 tablespoons of oil. Grind the remaining onion in a blender with 1\/2 cup water. Add this onion mixture to the hot oil.<\/li>\n\n\n\n<li>Meanwhile crush ginger, garlic and chillies. Add this paste to the onion mixture. Stir well for 3-4 minutes.<\/li>\n\n\n\n<li>Add tomatoes, yoghurt and salt. Cook for some time till the water evaporates. Add the fried fish pieces, coriander leaves and the juice from the lemons. Keep aside.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">For the Rice:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat ghee in a non-stick vessel. Add 1\/2 chopped onion, cardamoms and cinnamon. Immediately add the washed rice (drain without any water).<\/li>\n\n\n\n<li>Add boiled water (1:2 ratio) and salt and cook on high flame till the water is absorbed by the rice.<\/li>\n\n\n\n<li>Keep the rice covered for 10 minutes. Sprinkle garam masala powder over the rice.<\/li>\n\n\n\n<li>Now take a heavy bottomed vessel and add the cooked rice in one layer at the bottom. Add a few spoons of the fish masala. Toss some fried onion, nuts and raisins and a little garam masala powder and cover with a rice layer.<\/li>\n\n\n\n<li>Layer it up, finishing with the garnishes on top.<\/li>\n\n\n\n<li>Take a napkin (radius of the vessel), dampen it with water and a little rose water, and cover the vessel.<\/li>\n\n\n\n<li>Put the biryani on dum for 1 hour with light heat for the flavours to develop.
