{"id":7921,"date":"2023-12-02T03:41:47","date_gmt":"2023-12-02T03:41:47","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=7921"},"modified":"2023-12-02T03:41:47","modified_gmt":"2023-12-02T03:41:47","slug":"rockfish-recipe-baked-with-lemon","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/12\/02\/rockfish-recipe-baked-with-lemon\/03\/41\/7921\/47\/appdev2098\/fish-recipes-one\/rockfish\/","title":{"rendered":"Rockfish Recipe (Baked with Lemon)"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 whole&nbsp;(approximately 3 pound)&nbsp;Rockfish (I used Vermilion)<\/li>\n\n\n\n<li>3\u00a0tablespoons\u00a0extra virgin olive oil,\u00a0divided<\/li>\n\n\n\n<li>2&nbsp;tablespoons&nbsp;fresh lemon juice<\/li>\n\n\n\n<li>1&nbsp;tablespoon&nbsp;fresh thyme,&nbsp;finely chopped<\/li>\n\n\n\n<li>\u00bc\u00a0teaspoon\u00a0sweet paprika<\/li>\n\n\n\n<li>kosher salt and freshly ground black pepper<\/li>\n\n\n\n<li>lemon slices and thyme sprigs for garnish<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS&nbsp;<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Preheat the oven and prep the pan.&nbsp;<\/strong>Preheat the oven to 425\u00b0F, adjust a rack to the top third of the oven, and line a sheet pan with foil.<\/li>\n\n\n\n<li><strong>Prep the fish.<\/strong>\u00a0Your fish should already be gutted and cleaned. If it&#8217;s not already scaled, use a\u00a0fish scaler brush\u00a0or the back of a knife by rubbing it in the opposite direction of the scales. This might be a bit messy, as the scales tend to \u201cpop\u201d off, but it\u2019s quite easy. Rinse the fish and then pat it dry with paper towels.<\/li>\n\n\n\n<li><strong>Season the fish.&nbsp;<\/strong>Place the fish on the foil-lined sheet pan. Drizzle about 1 tablespoon of the oil on the fish and gently rub it in. Generously sprinkle with salt and pepper. Carefully turn the fish over and repeat this process. Then season the inside cavity with salt and pepper.<\/li>\n\n\n\n<li><strong>Score the fish if desired.&nbsp;<\/strong>Use the tip of a very sharp knife to cut three slits, about two inches apart, diagonally across the top of the fish.&nbsp;The slits should only cut through the skin \u2014 try not to cut into the flesh.<\/li>\n\n\n\n<li><strong>Add the lemon and herbs.&nbsp;<\/strong>In a small bowl, mix the lemon juice with the remaining tablespoon of oil, thyme and paprika. Drizzle this all over the top of the fish.<\/li>\n\n\n\n<li><strong>Bake the fish.&nbsp;<\/strong>Place the sheet pan in the preheated 425\u00b0F oven and bake just until the fish is cooked through, about 15 minutes. (You can test this by checking the internal temperature which should be about 140\u00b0F, and\/or use a sharp knife or fork to peek into the flesh near the center. The flesh should flake easily and be opaque. (If it\u2019s slightly translucent near the center, that\u2019s okay.)<\/li>\n\n\n\n<li><strong>Broil the fish if necessary.&nbsp;<\/strong>If the skin doesn&#8217;t become crisp and golden by the time it\u2019s cooked, remove it from the oven, turn on the broiler and adjust a rack so the fish will be a couple of inches below it. Place the fish beneath the broiler just until it\u2019s golden brown and sizzling. Watch it carefully as it could just take seconds.<\/li>\n\n\n\n<li>Serve!
