{"id":8207,"date":"2023-12-02T05:39:22","date_gmt":"2023-12-02T05:39:22","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=8207"},"modified":"2023-12-02T05:39:22","modified_gmt":"2023-12-02T05:39:22","slug":"salmon-nicoise-salad","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/12\/02\/salmon-nicoise-salad\/05\/39\/8207\/22\/appdev2098\/fish-recipes-two\/healthy-fish-recipes-two\/","title":{"rendered":"Salmon Nicoise Salad"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>8&nbsp;eggs<\/li>\n\n\n\n<li>1 1\/2&nbsp;pounds baby red potatoes<\/li>\n\n\n\n<li>1&nbsp;pound fresh green beans<\/li>\n\n\n\n<li>1&nbsp;small shallot (2 tablespoons&nbsp;minced)<\/li>\n\n\n\n<li>2 tablespoons&nbsp;white wine vinegar<\/li>\n\n\n\n<li>\u00be teaspoon\u00a0kosher salt, divided<\/li>\n\n\n\n<li>2 tablespoons&nbsp;capers<\/li>\n\n\n\n<li>\u00bd tablespoon&nbsp;fresh parsley<\/li>\n\n\n\n<li>7 tablespoons&nbsp;olive oil, divided<\/li>\n\n\n\n<li>\u00bd cup&nbsp;Nicoise or Kalamata olives<\/li>\n\n\n\n<li>1 pint&nbsp;cherry tomatoes or&nbsp;1&nbsp;large tomato<\/li>\n\n\n\n<li>8 ounces&nbsp;hot smoked (smoke roasted) salmon* or 2 cans salmon<\/li>\n\n\n\n<li>1\u00a0head\u00a0Bibb lettuce\u00a0(aka butter lettuce)<\/li>\n\n\n\n<li>3 tablespoons&nbsp;lemon juice<\/li>\n\n\n\n<li>1 tablespoon&nbsp;Dijon mustard<\/li>\n\n\n\n<li>1\u00a0small garlic clove, minced<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Cook the hard boiled eggs:<\/strong>\u00a0Follow the instructions to make the\u00a0Hard Boiled Eggs\u00a0or\u00a0Steamed Hard Boiled Eggs, or complete this step in advance and refrigerate.<\/li>\n\n\n\n<li><strong>Boil the potatoes and beans:<\/strong>\u00a0Fill a\u00a0large pot\u00a0with cold water and add 1 tablespoon\u00a0kosher salt. Add the whole potatoes and bring to a boil. Once boiling, boil for 8 to 12 minutes until fork tender.<\/li>\n\n\n\n<li><strong>Blanch the beans:<\/strong>&nbsp;Cut the ends off the beans. Bring a separate pot of water to a boil with \u00bd tablespoon salt. Boil the beans for about 5 minutes until tender but still bright green. Prepare a large bowl of ice water (or use the same one as for the hard boiled eggs). Right when the beans are tender, remove them from the boiling water with tongs and transfer them to the ice bath. Remove the beans and dry them with a towel, then mix them with a few pinches of salt and fresh ground pepper.<\/li>\n\n\n\n<li><strong>Finish the potatoes:<\/strong>\u00a0While the potatoes are cooking, mince the shallot. When the potatoes are done, drain them. When they are cool enough to handle, slice them into bite sized pieces. Place them in a bowl and gently mix in the minced shallot, white wine vinegar, \u00bd teaspoon\u00a0kosher salt, and \u00bc cup warm water. Let stand for 5 minutes, gently stirring occasionally. Then add the capers, chopped parsley, 1 tablespoon olive oil, and a few grinds black pepper. Taste and add additional salt if necessary.<\/li>\n\n\n\n<li><strong>Make the dressing:<\/strong>\u00a0In a medium bowl, whisk together the lemon juice, Dijon mustard, minced garlic, and \u00bc teaspoon\u00a0kosher salt. Gradually whisk in 6 tablespoons olive oil working one tablespoon at a time, until creamy and emulsified.<\/li>\n\n\n\n<li><strong>Prep the salad ingredients:<\/strong>\u00a0Slice the tomatoes\u00a0into wedges (or cherry tomatoes in half) and sprinkle with a little\u00a0kosher salt.<\/li>\n\n\n\n<li><strong>Prep the salmon:<\/strong>&nbsp;If using cold smoked salmon, no prep is necessary. If using canned salmon, drain it and flake it using a fork. If not packed in oil, add a drizzle of olive oil and a few pinches of salt. (You can also cook fresh salmon; see the note below*.)<\/li>\n\n\n\n<li><strong>Serve:<\/strong>&nbsp;To serve, in large shallow bowls or on large platters, add the Bibb lettuce leaves. Top with the potatoes, green beans, hard boiled eggs, tomatoes, salmon, and olives.
