You\u2019ll need about 4-oz fresh noodles, or 2-oz dry noodles for each serving)<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Tsukemen Broth<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/2\u00a0tablespoon\u00a0vegetable oil<\/li>\n\n\n\n<li>1\/2\u00a0lb\u00a0pork belly\u00a0(thinly sliced, you can also use bacon if you cannot find pork belly)<\/li>\n\n\n\n<li>2\u00a0cloves\u00a0garlic\u00a0minced<\/li>\n\n\n\n<li>2\u00a0teaspoon\u00a0freshly grated ginger<\/li>\n\n\n\n<li>2\u00a0cups\u00a0chicken stock\u00a0(I used reduced sodium)<\/li>\n\n\n\n<li>3\u00a0tablespoons\u00a0low-sodium soy sauce<\/li>\n\n\n\n<li>2\u00a0green onions \/ scallions<\/li>\n\n\n\n<li>2\u00a0shiitake mushrooms\u00a0(You can sub other mushrooms)<\/li>\n\n\n\n<li>1\/2\u00a0cup\u00a0shimeji mushrooms\u00a0(You can sub your favorite mushrooms)<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0mirin\u00a0(Use dry sherry or cooking wine if you prefer)<\/li>\n\n\n\n<li>1\/2\u00a0teaspoon\u00a0rice vinegar\u00a0(You can sub white vinegar or apple cider vinegar)<\/li>\n\n\n\n<li>salt and pepper\u00a0to taste<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0sesame oil<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Toppings<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2\u00a0soft-boiled eggs<\/li>\n\n\n\n<li>chopped green onions<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions\u00a0<\/h3>\n\n\n\n<p><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Make the tsukemen broth<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Prepare the ingredients: cut the pork belly into thin slices and then cut into 2-inch pieces; mince the garlic and ginger; chop green onions, and slice mushrooms.<\/li>\n\n\n\n<li>Heat oil in a large pot over medium heat. Add garlic and ginger, and cook until fragrant, about 1-2 minutes, stirring frequently.<\/li>\n\n\n\n<li>Add pork belly, and stir-fry until no longer pink.<\/li>\n\n\n\n<li>Add chicken stock, soy sauce and mirin.<\/li>\n\n\n\n<li>Cover and bring to a boil. Remove the lid, lower the heat and simmer for 10 minutes. While you are waiting, you can make soft-boiled eggs (see below).<\/li>\n\n\n\n<li>Add green onions and mushrooms. Bring it to a boil on high heat.<\/li>\n\n\n\n<li>Adjust the heat to low and simmer for another 5 minutes until the mushroom has softened.<\/li>\n\n\n\n<li>Add sesame oil and vinegar. Season with salt and pepper to taste. Stir lightly. Remove from heat and set aside.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Make the soft-boiled eggs<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Fill a saucepan with water (make sure there\u2019s enough water to cover the eggs), and bring to a boil. Gently lower cold-from-the-fridge eggs into the water. Simmer for 7 \u00bd minutes, adjusting the heat as necessary to maintain a gentle boil.<\/li>\n\n\n\n<li>Transfer the cooked eggs to iced water and chill for 3 minutes. Crack the eggs all over, peel the shell and slice in half lengthwise.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Cook Ramen Noodles<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Boil water in a large pot and add ramen noodles. Cook according to the instructions on the package. Once cooked, rinse the noodles under running water, and soak them in a bowl of cold water to cool. Drain completely and divide the noodles into 2 bowls.<\/li>\n\n\n\n<li><strong>Serve tsukemen:<\/strong>&nbsp;Place noodles into individual bowls, and place soft-boiled eggs on top of the noodles.
