It&#8217;s a comforting meal in a bowl, that&#8217;s bound to please!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">For the Beans:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0cup\u00a0dried red beans\u00a0Rancho Gordo or Camellia, if possible<\/li>\n\n\n\n<li>1\u00a0smoked ham hock\u00a0about 6 ounces<\/li>\n\n\n\n<li>4\u00a0slices\u00a0bacon\u00a0cut into \u00bc\u201d slices<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0olive oil<\/li>\n\n\n\n<li>7\u00a0ounces\u00a0skinless\u00a0smoked sausage, cut into 1-inch slices<\/li>\n\n\n\n<li>1\u00a0cup\u00a0diced yellow onion\u00a0<em>about \u00bd medium onion<\/em><\/li>\n\n\n\n<li>\u00bd\u00a0cup\u00a0diced green bell pepper<\/li>\n\n\n\n<li>1\u00a0celery stalk\u00a0<em>diced<\/em><\/li>\n\n\n\n<li>1\u00a0bay leaf<\/li>\n\n\n\n<li>1\u00bd\u00a0teaspoons\u00a0sweet paprika<\/li>\n\n\n\n<li>1\u00bd\u00a0tablespoons\u00a0hot sauce\u00a0like Tabasco<\/li>\n\n\n\n<li>1\u00a0quart\u00a0chicken stock<\/li>\n\n\n\n<li>3\u00a0teaspoons\u00a0kosher salt<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0ground black pepper<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0granulated sugar<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Garnishes:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sliced scallions\u00a0<em>green and white parts<\/em><\/li>\n\n\n\n<li>Fresh chopped cilantro<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the Rice:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/3\u00a0cup\u00a0canola oil<\/li>\n\n\n\n<li>1\u00a0large yellow onion\u00a0diced<\/li>\n\n\n\n<li>\u00bc\u00a0cup\u00a0unsalted butter\u00a0softened<\/li>\n\n\n\n<li>1\u00a0bay leaf<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0kosher salt<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0ground black pepper<\/li>\n\n\n\n<li>2\u00a0cups\u00a0uncooked jasmine rice<\/li>\n\n\n\n<li>3\u00a0cups\u00a0chicken broth<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Read through instructions and notes before starting.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the Red Beans:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Set a Dutch oven or heavy-bottomed, large pot over medium heat. Add the sliced bacon and olive oil and cook about 5 minutes or until the fat is rendered.<\/li>\n\n\n\n<li>Add onion, green pepper, and celery. Cook 4 minutes, stirring often.<\/li>\n\n\n\n<li>Add smoked sausage and cook, stirring often, 2-3 minutes, until sausage has begun to brown, onion is translucent and the green pepper and celery have softened.<\/li>\n\n\n\n<li>Add bay leaf, paprika and hot sauce. Stir and remove from the heat.<\/li>\n\n\n\n<li>Drain and rinse the soaked beans, and remove any pebbles or impurities. Add the beans and ham hock to the pot.<\/li>\n\n\n\n<li>Add chicken stock, being sure the beans are covered with enough stock.<\/li>\n\n\n\n<li>Increase heat to high, and bring to a boil. Skim off any foam that might boil to the top of the mixture.<\/li>\n\n\n\n<li>Reduce heat to LOW, cover and simmer 3-4 hours or until beans are tender and liquid has reduced and thickened.<\/li>\n\n\n\n<li>Remove the ham hock (pulling the meat from the bone, and adding it to the beans, if desired. The meat can be kept refrigerated, up to 5 days, for a different use.)<\/li>\n\n\n\n<li>Stir the pot often, being sure beans aren\u2019t sticking to the bottom of the pot.<\/li>\n\n\n\n<li>Discard the bay leaf.<\/li>\n\n\n\n<li>Season the beans with salt and pepper and add the sugar. Stir well and simmer another 10 minutes.<\/li>\n\n\n\n<li>Taste the beans and season with additional salt, pepper and hot sauce, if needed.<\/li>\n\n\n\n<li>Serve with Rice and garnish with scallions and chopped cilantro.<\/li>\n\n\n\n<li>Enjoy!<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">For the Rice:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat a large saucepan over medium-high heat and add the oil. When the oil is hot, add onion, butter, bay leaf, salt and black pepper. Cook while stirring often 6 minutes or until onions are cooked through and translucent.<\/li>\n\n\n\n<li>Add rice and stir well.<\/li>\n\n\n\n<li>Add broth and bring mixture to a boil. Cover, reduce heat to low and cook 15 minutes.<\/li>\n\n\n\n<li>Remove from the heat, leave covered and let stand 5 minutes.
